• EGGS, 6 yolks
  • SUGAR, 150 grams 
  • MASCARPONE CHEESE, 500 grams 
  • WHIPPED CREAM, 200 grams
  • STRONG COFFEE, about 500 ml
  • SPOUNGE FINGERS, 400 grams 
  • COCOA POWDER, as requested


First of all make some good coffee for about 10/12 people (small cups).

Spounge fingers have to be soaked into coffee (not very hot).

Mix egg yolks with the sugar until light and creamy.

Stir in the mascarpone cheese into this mixture and whipped cream.

In a square or rectangular glass dish put alternate layers of cream mixture and ladyfingers, starting with biscuits and finishing with cream mixture. Dust the top with bitter cocoa powder and leave it to chill in the fridge.
